So I didn't think I'd end up playing Skyrim again but after giving the Special Edition a try I realized I was wrong...

If you have it I would give a chance. The graphics are much improved and the performance is a lot better too.
Of course, there are things we'd like to have that Bethesda will never get around to, so we turn to mods.

This is the list of SSE mods I'm using currently. Consider them for your setup and post your own here as well, if you like.

    Changes Without Mods
    - Graphics control panel to override the AA and customize to suit your PC.
    - INI edits for FOV

Edit the Skyrim.ini in the Skyrim Special Edition folder in your Documents folder, usually under My Games.
Add these lines to the [Display] section:

Alternatively, you can use the console in game by pressing ~ and entering FOV 90, or any number you like.

There is another INI edit to change the 3rd Person targeting reticule but until I get it right I won't post it.

Mods (installed all of them with the Nexus Mod Manager)
Be sure to follow the instructions for each mod. Most of them don't require anything special.
A Quality World Map - 9.0.1 A Quality World Map - Vivid with Stone Roads
Dawn of Skyrim (Director's Cut) for SSE - larger cities with more buildings and vendors, including new ones like brewers and bakers.
Designs of the Nords SE - fancier banners for the Holds, more colorful.
Followers Can Relax - no longer rigid mannequins glued to your back while in town.
    HD Road Signs
    Immersive Citizens
Immersive Laundry - sounds silly but it makes settlements look more lived in.
    Lanterns of Skyrim SE
    Magical College of Winterhold
Mortal Enemies SE - prevents change of direction in mid-swing for the player and enemies.
No BS AI Projectile Dodge - no more spidey sense NPCs.
Ordinator - awesome perk overhaul with lots of new perks and effects.
Populated Cities Towns Villages - more people, could be trouble for thieves.
Proper Aiming - arrows go where the reticle is pointing, no change to projectile physics.
    Realistic Lighting Overhaul (RLO)
Realistic Water Two & LOD Fix
Skyland - A Landscape Texture Overhaul
    Skyland - Standing Stones
SkylightUI - SkyUI doesn't work in SSE but this clone does. Install in NMM with the + icon.
    Skyrim Flora Overhaul SE
Total Character Makeover - more realistic faces.
    Travellers of Skyrim SSE
    Unofficial Skyrim Special Edition Patch

I've also added some armor mods and extra items but that's very preferential.
